Scarce for one more day or two

While I've been piddling about here and there on the web I've not only been working on an anti Burr web site, but I've been freezing and canning all my wonderful veggies from my garden. I had two refrigerators bursting at the seams and I didn't want to wait too long or the veggie quality would degrade.

Canning takes constant attention and it is pretty labor intensive, so it takes me away from doing anything that takes more than a few minutes. I'm not gone for good. I promise. ( I realize that might disappoint a few of you...but you'll just have to suck it up and deal with it, won't you? )

On the list for today: blueberry jam, blackberry jam, salsa, salsa verde with tomatillos, pickled jalapenos, pickled okra, brined sweet pickles, green beans and jalapeno relish.

I made extra hot salsa last night and my hands were burning from the pepper juice and I was wearing gloves!

You're having a good season, Betsy...

Since I added some varieties of 'hot' peppers, I was wondering if your jalapeno(s?) are fully ripe already? Mine are still a couple weeks away, but have produced well. In fact, much better that my non-hot bell style peppers.

I pick my peppers small

to use in pepper jelly and mild salsas. Once I've picked as much as I can and the plant is full of blooms, I'll let them get bigger and hotter for my hot salsas. I purchased some very hot jalapenos from a farmer up the street to make salsa this weekend and still couldn't get it hot enough for my hubby. Oh well.

My beans, peppers, onions, tomatoes, tomatillos, cantaloupes and all my herbs are doing well. Curcurbits are sucking wind.

What's Up with Socialized Fire Protection, Anyway?

It's time for government to get out of the fire protection business. All these taxpayer-supported fire departments are the slippery slope toward Marxism. If you want the fire put out at your house, you should have to give the private fire-putting-out company your credit card number, or perhaps you should enter into an annual fire protection service agreement for a hefty fee.

But if you've had a fire before, in this house or another house, maybe the fire-putting-out company should be able to say you have a prior fire experience, and can decide to not sell you a protection contract at all.

By the way, if you have one of these private fire protection contracts, but they determined that the fire was your fault from say, letting the gas grill get out of control, or maybe not snatching that lightning bolt out of the sky with your bare hands, you'll have to pay out of pocket for the fire-putting-out company visit, even though you've been paying your fire protection contract bill every month for years.
